baked oatmeal

  • The much promised baked oatmeal recipe our family loves. It's funny the dish never lasts long enough to get a good picture. But anyways, it's worth trying, my kids eat it all up and it's one of our all time favorite breakfasts! I've even made it for dinner before. It's from this cook book, which is another one of my favorites for cooking for kids. Love that with a private blog I can share things like this, enjoy!

  • Baked Oatmeal
  • 2 cups rolled oats
  • 1/2 cup walnut pieces, toasted (see page 219) and chopped
  • 1/3 cup maple syrup, plus more for serving (the recipe calls for sugar or maple, but maple tastes so much better!)
  • 1 teaspoon aluminum-free baking powder
  • 11/2 teaspoons ground cinnamon
  • Scant 1/2 teaspoon fine-grain sea salt
  • 2 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted and cooled slightly
  • 2 teaspoons pure vanilla extract
  • 2 ripe bananas, cut into circles
  • 11/2 cups berries, I use blueberries, frozen or fresh- peaches sound good too!

Preheat the oven to 375 with a rack in the top third of the oven. Generously butter the inside of an 8-inch square baking dish.

In a bowl, mix together the oats, half the walnuts, the baking powder, cinnamon, and salt.

In another bowl, whisk together the maple syrup, the milk, egg, half of the butter, and the vanilla.

Arrange the bananas in a single layer in the bottom of the prepared baking dish, I add more sometimes too. Sprinkle half of the berries over the top. Cover the fruit with the oat mixture. Slowly drizzle the milk mixture over the oats. Gently give the baking dish a couple thwacks on the countertop to make sure the milk moves through the oats. Scatter the remaining berries and remaining walnuts across the top.

Bake for 35 to 45 minutes, until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for a few minutes. Drizzle the remaining melted butter on the top and serve. Drizzle a bit more maple syrup if you like it sweet like I do :) We also like ours served with either a cup of milk or with milk poured on top.
